What does a 1:16.7 coffee ratio mean?

It means 1 gram of ground coffee for every 16.7 grams of brewing water. For example, 20 g of coffee at 1:16.7 calls for about 334 g of water.

A starting point, not a rule

Measured Bloom defaults to 1:16.7 because 60 g of coffee per liter of water is a commonly used filter-coffee reference point. The Specialty Coffee Association's Certified Home Brewer testing begins at 55 g/L, which is roughly 1:18.2. Your preferred ratio can be stronger or lighter depending on the coffee, brewer, and taste.
